Barbecue sweet potato wedges are the perfect side for any main course. With sweet potato becoming a delicious trend, these are sure to be a hit with any guests. These are simple and scrumptious! - Large Pot
- Small Mixing Bowl
- 4 large sweet potatoes
- 1tbsp sunflower oil
- 1/2tsp salt
- 1/2tsp ground pepper
In a large pot with cold water, bring the water to the boil.
Simmer for approximately 10 minutes or until you can pierce the potato without much resistance.
Drain the pot and leave the potatoes until they are cool enough to handle without injury.
Slice the potatoes into wedges.
In a bowl, mix the oil, salt and pepper.
Brush the oil mixture onto the potato wedges.
Lightly oil the barbecue grill and grill the potatoes on a medium heat for 8-10 minutes, or until the grill marks appear on the wedges. Make sure to flip halfway through.
